Why Finding the Right BBQs and Smokers Makes All the Difference

BBQs and smokers come in more shapes, sizes, and fuel types than ever before — and picking the wrong one can mean wasted money, frustrating cooks, and food that just doesn’t deliver.

Here’s a quick look at your main options:

Type Best For Ease of Use Flavor Intensity
Pellet Grill Versatility, set-and-forget Very Easy Medium
Charcoal Smoker Traditional BBQ flavor Moderate High
Gas Grill Fast, everyday grilling Easy Low-Medium
Electric Smoker Apartments, small spaces Very Easy Medium
Offset Smoker Competition-style smoking Advanced Very High

Whether you want to slow-smoke a brisket all day or sear a steak at high heat, the right equipment makes it possible. Modern pellet grills can reach up to 700°F for searing and drop down for low-and-slow cooking around 225°F — all on the same machine. Traditional offset smokers, on the other hand, reward patience with deep, wood-fired flavor that’s hard to beat.

The difference between a good cookout and a great one often comes down to knowing your gear.

The helpful team at Lowcountry Ace has guided countless backyard pitmasters and coastal cooks across the James Island and Folly Beach area in choosing the best BBQs and smokers for their needs. They bring hands-on product knowledge and local expertise to help you cut through the noise and cook with confidence.

Understanding the Main Types of BBQs and Smokers

When we talk about bbqs and smokers in South Carolina, we aren’t just talking about a way to cook dinner; we’re talking about a lifestyle. Choosing the right fuel source is the first step in your journey. Whether you are looking for the convenience of gas or the deep, woody aromatics of a traditional wood smoker, each type has its place in the backyard.

Fuel Types and Flavor Profiles

  • Pellet Grills: These use compressed hardwood pellets. They offer clean, precise cooking with digital temperature control.
  • Charcoal Smokers: Preferred by many purists for that rich, smoky flavor. Options range from classic kettles to heavy-duty charcoal-smoker-grill combos.
  • Gas Grills: Using propane or natural gas, these are the kings of convenience for a quick Tuesday night burger.
  • Electric Smokers: Great for areas with strict fire codes or small balconies in Charleston. They are “set-it-and-forget-it” but generally offer less bark development on meats.
  • Offset vs. Vertical: Offset smokers use a side firebox to move smoke across the meat, while vertical smokers stack the meat above the heat source, often using water pans to regulate temperature.

The Rise of Pellet BBQs and Smokers

Pellet grills have absolutely exploded in popularity over the last few years, and for good reason. They combine the flavor of wood-fired cooking with the precision of an indoor oven. Brands like Traeger have revolutionized the market with WiFIRE technology, allowing us to monitor our brisket from our phones while we’re picking up supplies at the Riverland Market.

One of the biggest advantages is the hopper capacity. High-end models often feature a 22 lb pellet hopper, which is enough for a long, overnight smoke without needing a refill. If you are looking for the best-wood-pellet-grills, you’ll find that the ease of a push-button start is a game-changer. For a quick tutorial, you can watch How to Fire Up a Traeger to see just how simple the process is.

Traditional Charcoal and Wood Smokers

If you want to feel like a true pitmaster, nothing beats the ritual of fire management. Traditional offset smokers are built with heavy gauge steel, which provides superior heat retention compared to thinner, mass-market alternatives. This is essential for maintaining that perfect 225°F “low-and-slow” temperature.

The offset design, featuring a side firebox, allows for authentic Texas-style smoking where the meat never sits directly over the flame. This produces incredibly juicy, tender results. If you already have a gas setup and want to experiment, you can even learn How To Turn Your Gas Grill Into A Griddle or use smoker boxes to add flavor. For those ready to commit to the craft, an outdoor-wood-smoker is the ultimate backyard centerpiece.

Key Features to Consider for Your Next Cookout

Before you pull the trigger on a new unit, you need to think about how you actually cook. Are you hosting the whole neighborhood in James Island, or just grilling for two?

Cooking Capacity and Space

Capacity is often measured in square inches. For example, the Traeger Timberline XL offers a massive 1,320 sq. in. of cooking space across three tiers of grates. That is enough to fit 9 chickens or 8 racks of ribs at once! Meanwhile, a mid-sized unit like the Weber SmokeFire EX6 provides 1,008 sq. in., which fits about 20 burgers — perfect for most family gatherings.

Temperature Range and Control

A versatile smoker should handle a wide range of temperatures. Many modern units operate between 200-600°F. This allows you to smoke a pork butt at 225°F and then crank it up to sear a ribeye. High-end models can even reach 700°F for true steakhouse-quality searing. Check out the Ultimate Guide to Choosing a Big Green Egg for more on how ceramic insulation helps maintain these ranges.

Versatility: Can Your Smoker Double as a Grill?

The best bbqs and smokers today are multi-functional. We love machines that can smoke, grill, bake, roast, and braise. Some pellet grills even feature induction cooktops on the side for searing or sautéing.

Top-Rated Models and Performance Statistics

When we look at the heavy hitters in the industry, a few names consistently rise to the top based on build quality and performance.

  1. Traeger Timberline XL: This is the “Cadillac” of pellet grills. It features WiFIRE connectivity, an induction side burner, and a 10-year limited warranty. It’s designed for the person who wants every bell and whistle.
  2. Weber SmokeFire EX6 (2nd Gen): This model offers a 200-600°F range and uses “Flavorizer bars” to provide direct heat, which is a departure from the standard heat diffuser plates found in most pellet smokers.
  3. Pit Boss Navigator 6-Series: A vertical pellet smoker designed for large capacity. It’s perfect if you primarily want to smoke large quantities of meat rather than grill burgers.
  4. Big Green Egg: The gold standard for ceramic kamado-style cooking, offering incredible insulation and versatility for smoking, grilling, and baking.

Keep an eye out for a pellet-grill-clearance at our local shops to snag these premium models at a better price.

Choosing BBQs and Smokers for Beginners vs. Pros

If you are a beginner, “set-it-and-forget-it” technology is your best friend. Digital controllers and meat probes take the guesswork out of the process. You can see the latest tech in the Meet the 2025 Weber Spirit Grills video.

For the experienced pitmaster, manual airflow and damper control are part of the fun. Managing the fire in an offset smoker requires more attention but offers a level of customization that automated grills can’t match. If you want simplicity without the wood fire, electric-smoker-reviews often highlight how easy they are for consistent results in tight spaces.

Maintenance, Safety, and Essential Accessories

A high-quality smoker is an investment, and like any investment, it needs maintenance.

Cleaning and Care

  • Grates: Clean them after every use with a quality brush. For cast iron, remember to season them with oil to prevent rust.
  • Ash Removal: Especially in pellet grills, ash buildup can cause ignition issues. Use an ash vacuum or the grill’s built-in cleanout system.
  • Degreasing: Regularly clean the drip tray and grease bucket to prevent flare-ups.
  • Covers: In our humid coastal environment around Folly Beach, a heavy-duty cover is non-negotiable to prevent corrosion.

Learn more with our guide on bbq-grill-maintenance or watch How To Clean a Traeger for specific steps.

Safety Standards and Fuel Essentials

It is important to be aware of safety labels, such as Prop 65 warnings, which you might see on wood-fired products. These warnings exist because combustion by-products (like wood dust and carbon monoxide) and certain metals like nickel are known to the State of California to cause health risks. You can find more details at P65Warnings.ca.gov.

When it comes to fuel, quality matters.

  • Wood Pellets: Use 100% all-natural hardwood. Fruitwoods (apple, cherry) are great for poultry, while hickory and mesquite are better for beef.
  • Wood Chips/Chunks: Essential for charcoal smoking. Check out our selection of bbq-wood-chips.
  • Propane: Always keep a spare tank. We offer bbq-tank-refills to keep your gas grill running all summer.

Frequently Asked Questions about BBQs and Smokers

How do I maintain consistent temperatures for low-and-slow cooking?

Consistency comes down to insulation and airflow. Heavy gauge steel or ceramic bodies (like the Big Green Egg) retain heat much better than thin metal. For pellet grills, the digital controller does the work for you. For charcoal, it’s all about the dampers. More air equals more heat; less air equals less heat. You can learn about different cooking surfaces and heat management in How To Choose a Griddle.

What is the difference between an offset and a vertical smoker?

An offset smoker has the firebox to the side, allowing smoke to pass horizontally over the meat. It generally requires more space but is the gold standard for flavor. A vertical smoker has a smaller footprint and is more fuel-efficient because the heat rises directly through the racks. If you want to customize your rig, look into bbq-smoker-modifications.

Search Lowcountry Ace

How much cooking space do I need for a large group?

As a rule of thumb, look for at least 700-1,000 total square inches if you plan on hosting parties. A primary cooking area of over 700 sq. in. is plenty for a few briskets. If you’re doing a full backyard bash, you’ll want the backyard-bbq-essentials and perhaps a multi-tier rack system to maximize your vertical space.

Conclusion

Finding the perfect bbqs and smokers doesn’t have to be a trial by fire. Whether you are looking for the high-tech convenience of a Traeger, the versatility of a Big Green Egg, or the classic feel of a Weber, the key is matching the equipment to your lifestyle.

This Ace Hardware store is not really close to my house but I came here after having a poor experience at the Johns Island Ace. I was greeted by friendly employees upon entry and throughout my experience, asked if I needed help, the store atmosphere was cheerful and in organized condition, and they had absolutely no problem exchanging an item purchased at another Ace Hardware for a few other items from their store. I even spent extra money in store. I will drive the extra mileage to come to this store moving forward.

Visited Sunday afternoon 3/23/25. Always a pleasure to browse and shop at this Ace store. A man, Steve, around 4-430 totally helped me in the name of Customer Service. He cut chain for me that isn't sold separately for a hanging basket. Bigger, he followed me to checkout with a bag of soil weighing a ton. Steve insisted I bring my SUV parked in far-away Publix Land so he could lift it out of cart into my SUV. Wouldn't budge on who was moving the soil into the SUV! Thank you again, Steve! Anita

Manager wouldn’t return money to my credit card despite having the same card and rewards number (no receipt), so gift card only. I was told “I’d have to look it up in the computer, it’s tedious”

After talking to other customers, I learned it’s routine to return with same credit card or rewards account.
